<p>まずは越前がにの基礎知識について福井県農林水産部水産課の前田 英章さんからレクチャーいただきました。<br />
越前がにの漁場となる日本海・若狭湾は水深200m〜400mにもなり、越前がにの餌となる良質なプランクトンが生息したエリアです。</p>
<p>福井の海に生息する魚は実に400種類！その漁獲量は16,367t（平成28年）にもなるそうで、<br />
その中でも越前がに（ズワイガニ）は433t（3%）ほどの割合なんだとか。</p>
<p>越前がにの特徴は海底250〜300mに生息し、オスは年に1回、最大10回は脱皮するそうです。<br />
漁獲対象となる体長90mm以上（オス）のサイズになるまで、およそ7〜8年もの歳月がかかるんですって。</p>
<p>ちなみに良い越前がにの見分け方として上げられたのは、蟹の甲羅についている「カニビル」と呼ばれる黒い粒粒が多いほど、脱皮から時間が経過しているので、身入りが良いとされているそうですよ！</p>

<p>明治42年から「献上がに」として毎年皇室に献上しているほど高品質な福井の越前がには、その証として全てに黄色いタグが付けられていますが、その中でも最上位品質となる<strong>越前がに「極（きわみ）」</strong>は重さ1.3kg以上、甲羅幅14.5cm以上、爪幅3cm以上にもなるそうで、0.1%しか無いという超レアものなんですって。</p>
<p>ということで越前がにの新作メニュー発表会の模様をお伝えしました。</p>
<p><strong>北陸を代表する福井の冬の味覚、越前がにの解禁日は11月6日（火）です！</strong></p>
